Losing weight, one diet at a time; one month at a time…
I found this recipe years ago in a health food cook book. I changed it a bit to make it the way I liked it. Here it is.
1 lb Italian turkey sausage – I use the big fat links
1 small onion
1 clove minced garlic
2tbs olive oil
1 cup brown rice
3 1/4 cups of liquid, with at least 1 cup of the liquid being any type of salsa you like – you can use more than 1 cup, but no more than 2 cups. The remainder of the liquid can be water or chicken broth/stock.
salt & pepper to taste (depending on the salsa and the broth – you may not need any salt)
Cook the sausage according to the directions and cut into 1/2 – 1″ slices. Saute the onion and garlic in the olive oil until the onion is soft. Add the rice, sausage and liquid. Bring to a boil, cover, reduce to simmer. Cook for about 45 minutes or until the liquid is gone. Don’t stir during cooking.

Sounds great. As a cupful of brown rice would expand to about two and a half cups once cooked, it is more than I could eat at one meal.
I would ring the changes with oatmeal some days (oats are too difficult to polish so they always have the bran included) and lentils on other days, because they both cook a lot faster than brown rice.
Brown rice has that chewy texture that I enjoy so much.

I like it. It’s just hard to stay away from all the other foods and then still lose the weight. One thing I have found to get the weight off quick and ramp up the energy, is to stay away from diet soda and drinks full of artificial sweetners. Drink water!!!

Brown rice is a healthy choice unlike white rice. Adding bean to it forms a complete protein. Good recipe, I’ll try it.

I love rice. Problem with me is gaining weight by eating too much. But, this recipe does sound delicious and I would like to try it. I do agree that the brown rice is much better for you than white rice. It’s fun to mix in natural long grain rice with it.

Hey this looks really good. I have a bit of trouble finding Turkey sausage here. i live in germany, I have been looking everywhere, my german is okay but I guess this could be a reason I am struggling. Anyway thinks for the awesome recipe when I find some sausage im gonna make it!

This sounds a little like gumbo to me, which I love. I had no idea that white rice was not as good for you as the brown. My daughter is a little overweight and she loves white rice. I guess I should let her know that brown might be a better choice. THanks for the recipe.

This is very healthy and very filling. I had to use up turkey sausage in my fridge, and I had some rice. That’s how I made this up yesterday in my hostel.Anyway i will try this at my home.My mother is good in cooking.Hope she will like this taste.

This i an excellent recipe, but will probably need a little extra kick. I would suggest adding a dash of Tabasco or Cayenne Pepper to give it that ummph. Looks delicious otherwise, keep these recipes coming

Although this does sound good, nothing beats pork sausage in any Spanish cuisine. I understand it is not nearly as healthy, but it definitely provides that traditional Spanish flavor.

When cooking sausages of any type I always boil them for approx 10′ – this ensures they are fully cooked through, but also some of the fats are removed. If you then want better colour on the meat, sautee briefly in a skillet with a little olive oil.

For a true mexican flavor use “chorizo” or “longaniza” instead of the sausage, add a few sprigs o cilantro to the cooking water and you have a great tasting dish!

I was a bit surprised when I read your recipe for soup. I think it is the equivalent to our sausage casserole but we don’t put rice in it. I suppose the starch from the rice though thickens the soup / sauce and eliminates the need for a thickening agent. Nice one. i will try it and let you know how I get on.

I have been using Warrior Milk for about 6 months. I tried Muscle Milk and Optimum Nutrition’s proteins but found both too hard on my stomach.Warrior Milk protein doesn’t give me the upset and I like many of their flavors. My absolute favorite is mixing the chocolate and peanut butter flavors. I have had no problems ordering off their website and the products always came quick enough.This protein is really affordable and was a lot cheaper than using Slim Fast shakes which I’ve used in the past. My goal for using the protein was to lose just 5-10 lbs (I was only 130 lbs to start) by replacing meals with the shakes. I live in the UK and have never come across Italian turkey sausage before – can you substitute it with something else? Would it be closer pork sausage or is it a cured meat of some kind?
