Easy Baked Fish and Chips

4 large red skinned potatoes

1/3 cup Kraft Light Done Right – Zesty Italian Dressing

1 pkg Shake N Bake Extra Crispy Seasoned Coating Mix

1 1/2 lbs. white fish fillets – haddock, halibut or cod (I used cod)

1/3 cup Miracle Whip Light

Preheat oven – 400.

Cut each potato into 8 wedges lengthwise. Place in a large bowl and toss with dressing and 1/3 cup of the coating mix. Arrange on baking sheet sprayed with cooking spray. Bake for 20 minutes.

Meanwhile, spread remaining coating mix on large plate. Spread tops of fish fillets with Miracle Whip and press into coating mix. Spread remaining sides of fillets with Miracle Whip and press into coating mix to cover. Place fillets on broiler pan and bake the fish with the potatoes for 15 minutes or until fish flakes easily with fork and potatoes are tender.

    So it’s that easy? I always thought it takes more but I guess these days anything can be cooked using all sort of products like miracle whip.

    Looks very good….although, isn´t it a bit high in salt? Last time I checked the shake and bake, it was pretty high on sodium, and the dressing is as well. But I always to keep everything really low-sodium when cooking for my dad. Otherwise, this looks like a tasty low-fat recipe :)

    I also agree. maybe you can treat yourself to like, an in-home massage or something to make up for it. :) .Since I am a man I will not submit an idea of how you should indulge yourself. But, I will say that he better bring you back a sandwich! fish also tasty low fat recipe….i think it is easy to prepare.

    Thanks, this recipe is so easy to follow , and it looks tasty and best of all healthy , this will definitely be a better substitute to snacking on junkfood.

    Sounds good, the Italian Dressing sounds like it gives it a nice little kick. I would have to replace the Miracle Whip with Helman’s though.

    To be honest it is was hard for me to try this baked recipe as i am a great british lover of fish and chips, but my waistline now shows the many years of fat dripping batter so a healthier option is a welcome change.

    My wife and I tried this tonight and I must say, it was fantastic. We used halibut fillets from Costco. I love recipes that leverage common refrigerator items like salad dressing and turn them into something special. Nicely done!

    I sometimes buy frozen chips. But, I never fry them, I use a baking tray and put them in the oven. I have to say your recipe for fish and chips looks appetising, worth having a go I think.

    Rather than the processed elements in the recipe, try making your own breadcrumbs from stale bread crumbled and baked in the oven. Also inside of the salad dressing use an emulsion of extra virgin and lemon juice.

    Thanks so much for this. This might sound a little strange, but I spent the first few years of my teenage life in Naples, then traveled around the globe. Now I’m living in Australia, with my Chinese wife, and son we had whilst living in Japan! Truly internationalized, eh? Anyway, I’ve been trying to rediscover the smells and tastes of my youth with some authentic Italian recipe like these, best I’ve found so far! Thanks again, I’ll see if I can add the feed to my Google reader tonight, though my son usually does that for me!
