Week 2, Day 2
Breakfast – Kashi – 200 calories
Mozzarella cheese stick – 80 calories
Lunch – Chicken Fajita – 230 calories
Mozzarella cheese stick – 80 calories
Dinner – JC Meatloaf w/veggies – 300 calories
Rita’s Italian Ice – Raspberry with real raspberries! (does that count for fruit?) – 160 calories
Total calories – 1050 – I know this is tooooo low and will only hurt me in the long run.
I got weighed this morning and I’m down 8lbs. from when I started a little over a week ago. I’m sure it’s mostly water-weight, but it’s gone.
I have been reminded by John of Total Transformation Test that I don’t eat enough calories or enough fruits and veggies. I’ve struggled with the fruits and veggies most of my life. But, since I gave up cooking – it’s become even more difficult. I just don’t like fruit – never have. I don’t even like fruit-flavored candy. I will enjoy a fruity Italian Ice, but that’s about it. As for the calorie intake, I think if I plan out my weekly menu – as I’m supposed to be doing – that will help me get the correct amount of calories. I’ve added that task to my to-do list – so, it will get done.
We’re going to Maine next week to visit the Emperors family. Most of them still live in Maine. Eating will be a challenge as we’ll be at the mercy of the relatives. In addition to that – I’ve never met any of these relatives and I’m a nervous wreck. But I will persevere and be just fine.

No – I especially don’t like berries!
I’m ok with watermelon, grapes, canned fruit and applesauce – are they ok?

Frozen fruit is better- the freezing process maintains the nutrient and vitamin content better (plus most canned fruits are packed in nasty stuff)…

You need to buy the natural kind that doesn’t have added high fructose corn syrup. Trust me 95% of the stuff on your local grocery store’s shelves has HFCS so be sure to check.

Well, I’m in Maine now and I’m at the mercy of the family that’s feeding me. But, I remembered that I do like cantaloupe.
Once I get back to PA next week – my plan is to start actually cooking again. I’ve found that if I cook it – I will eat it. So, I will cook veggies and eat them!
